i am pretty sure there are commercial refrigerators in this format though, but it makes no sense to make freezers any other way at all, for this very reason
probably can't get a much cheaper insulated box than a chest freezer in general also, if you were to build something... but on the other hand, if you built it yourself, you could make the insulation way thicker, the whole thing could be a bit more shallow like on a benchtop only 2 feet deep, and yeah, one of the great things is you can put a double glazed lid on it so you can inspect them, and have sensors inside showing you readings of whatever, air pressure, humidity, etc
oh yeah, and outside of the mycology use, a vibration free freezer would be amazing for growing giant crystals inside vacuum insulated vessels, something with the compressor fully isolated from the cabinet... vibrations cause crystals to break... and it would be easier to add giant electromagnets as well, these can stop the low density "smoke" that comes off crystals as they form, further improving crystal size (and thus purity)

I bought a mini fridge for my lab and it’s way too small. Can’t fit media bottles inside upright. Costco or Craigslist sells chest freezers for pretty cheap and they have the head room that I need.
yeah, it's a brilliant idea and really not hard to add a thermostat override... in some cases you may even be able to just swap out the thermostat unit built into it for one that works with above freezing temps... in most cases it's a pretty simple circuit, can even be just one thermometer and smol circuit with solenoid and done
