Oven fish usually has good flavors cooked into the fish, but always a bit dry for my taste.

Wrapping in parchment paper is good and all, but it creates a lot of soggyness.

Which type of fish we talkin here

So far just sockeye salmon.

I'm going to nail down exact temps and timings over the next week and publish my method here 🤟🏽😎.
