Curious about potatoes as I love them. Are they really on par with the rest? I don’t eat them everyday but I do enjoy them regularly

I’ve read that potatoes cause a spike in blood sugar levels, therefore diabetic people should not eat them. On the other hand using vinegar as addition it was seen that the spike is less strong. In my experience potatoes are good for intestinal digestion.
