Every time I smoke something, I make a smoked brat and cheese plate to eat while we wait for the main course. I call it the homeless charcuterie board.

Usually, yes. Par-boil in beer takes β€˜em to the next level. But this time I did not, and I regret it.

Every time I smoke meat, I always throw a pack of brats on too because they finish in under 2 hours and shut up the people asking when the other stuff is done. Gives you a great buffer when that 4 hour or 6 hour smoke turns into 5 or 7. 😁
