I have been running almost exactly the same setup recently but instead of Ubuntu I used Trisquel GNU/Linux

I now migrated from using the ThinkPad to a fanless, steel encased, miniPC also with Trisquel. Even with only 8GB Ram, I have lots to spare despite having 5 awesome bitcoin apps running on Umbrel.

Never heard of Trisquel before. Is that second screenshot a separate monitoring app on a phone?

https://trisquel.info/ is pure GNU/Linux with the proprietary Linux kernel deblobbed. It is one of thr few dostros that does not include or recommend any propertiary software at all in its repositories. It is endorsed by the FSF and the only usable distro I trust. Its based on Ubuntu so very user friendly but everything nasty stripped away and way more lightweight than Ubuntu. Especially if you opt for trisquel mini with the lxde release.

The second screenshot is a section of my trisquel desktop. Its conky with the Automatik theme for system monitoring.

If I want to monitor remotely from my android tablet I just connect with VNC, you'll notice the X11 vnc server application running in my system tray.
