Most north american wild rabbits taste pretty strong IMO and most darker flesh. The typical meat rabbit is the European rabbit. Mild white meat. They have good meat to bone ratio too.

Many breeds of the European rabbit are considered meat breeds, including new Zealand, Californian, satins, chinchillas, Flemish giants, etc

What region are you in? If you are in eastern north america I'd say they are likely eastern cottontails.
