I've had the same Swiss Victorinox set for 6 years now. I ought to get them professionally sharpened, but with regular steeling they've held up great. All straight edge, only the bread knife is serrated.

None at all. I would go so far as to say these handles are permanent. I have the plastic handled ones, but there are also versions with wooden handles:
The Work Sharp Precision Elite sharpening system is my favorite and easiest I've found for DIY sharpening. I put a seriously sharp edge on my EDC Leatherman with that thing and it's held up well. Key is to use long strokes across as much of the blade length as you can.
That system looks really interesting. I looked at their other products and I think I'll go for their whetstone. It's something I've always wanted to learn how to do, and I've just got kitchen knives to sharpen.
