Does anyone have or recommend a knife set that is #worththesats ?

The one we got 3 years ago has multiple plastic handles breaking. Quite annoying. Looking for a reliable one that is preferably made from metal, wood, and other strong materials.

If the metal is worth the squeeze, putting your own scales on isn't very difficult.

Pop the plastic off and shape up some pieces of wood, sand and shape to preference. (Tape off the metal blade when working the shank and scales.) I tend to prefer a big fat handle.

My grandfather was a machinist making knives in his day. One of the most comfortable handles I've used was literally just rectangular scales. No shaping.

There are some hobby #blacksmith here on nostr--I follow a couple. I haven't set up a forge yet. I'd like to start with a foundry and make my own steel from rock, but acquiring this knowledge is hard to find and not my top priority right now.

I've had the same Swiss Victorinox set for 6 years now. I ought to get them professionally sharpened, but with regular steeling they've held up great. All straight edge, only the bread knife is serrated.

None at all. I would go so far as to say these handles are permanent. I have the plastic handled ones, but there are also versions with wooden handles:

The Work Sharp Precision Elite sharpening system is my favorite and easiest I've found for DIY sharpening. I put a seriously sharp edge on my EDC Leatherman with that thing and it's held up well. Key is to use long strokes across as much of the blade length as you can.

That system looks really interesting. I looked at their other products and I think I'll go for their whetstone. It's something I've always wanted to learn how to do, and I've just got kitchen knives to sharpen.

Probably cliche, but I sold Cutconknived back in college (20+ years ago) and my Mom's are still good, and I have a set and love them too. Handles are some kind of composite material, but no issues at all.

I bought them 5 years ago. A few months ago a knife fell off the counter and the point chipped after hitting the tile floor. He ground a new point into the blade and refused to even charge me for the return shipping.

Any knifes made in Solingen, Germany are the real thing. Especially from small manufacturers that still know their crafts.

Tradition going back to the Middle Ages.

I like Mühlenmesser and here the raw metal ones. They stay sharp for generations if used correctly.

(E.g. never scrape anything off the chopping board with the blade, only with the back of the knife.

Never put your high performance knife in the dishwasher or a knife block.

Always wash your knife straight after use and dry it with a towel.)

I still use my grandmother’s knife.
