It’s our second year water glassing eggs, and we are three jars in with a fourth coming along. Each gallon jar holds just over three dozen eggs. They need to be unwashed and clean, however, so any eggs with dirt or that got wet just go into the immediate eating queue.

Water glassing involves using hydrated lime at a specific ratio (1oz per quart of water). This helps seal up the pores in the shell and these will be shelf stable into the winter and beyond. They do change slightly but still quite edible and usable, especially in baking.

Doing this this year. Excess eggs right now, but nothing from Nov to Feb.
