Smoked a Boston butt today from our friends farm in Marshall VA. Used his pork rub on a mustard base. Nomtastic. In the future I’ll plan for it to go longer with more rub.

We took the cub scouts camping on the USS Wisconsin in Norfolk this weekend. Great overnight and super cool. The bunks are a bit small for the claustrophobic! #scouting 
We came back from a swim meet to see our cow had delivered her calf a few weeks earlier than we expected on Wednesday. Both mama and baby (boy) are doing well so far! #homesteading #grownostr 
Hosting a retreat in Charlottesville area for a group of #osint collaborators. Thinking about starting to post our daily news here in addition to Twitter And Mastodon as part of #grownostr but don’t want to spam the hashtag too much. We tend to do 8-10 stories about different global hotspots m-f daily. Would that be too much?
A lot of the crew is touring Monticello this morning and we kick off a fun weekend this evening! 
We saw a massive snapping turtle in our yard this morning, heading back to the the pond. I’ve seen her (?) once before during a high water event where she had cleared out of the water pouring through and over our spillway/dam and up to higher ground but that was many years ago.

We’ve been at the farm now for a decade. I spent a lot of time fighting against the natural cycles at first but this is a much better path! Seasonal alignment is a blessing for rediscovery (“strawberries are back!”) and reset.
It’s our second year water glassing eggs, and we are three jars in with a fourth coming along. Each gallon jar holds just over three dozen eggs. They need to be unwashed and clean, however, so any eggs with dirt or that got wet just go into the immediate eating queue.
Water glassing involves using hydrated lime at a specific ratio (1oz per quart of water). This helps seal up the pores in the shell and these will be shelf stable into the winter and beyond. They do change slightly but still quite edible and usable, especially in baking.

We have been working on a greenhouse for a long time. We finally finished it at the beginning of the month for my wife’s birthday. Now to start figuring out the aquaponics setup!

Once you get a dairy cow all things are possible. And homemade mozzarella and ricotta into your lasagna is an entirely different meal than store bought.
