I think it’s the paint on these door hinges sticking to itself that is making a loud sound whenever doors are opened.

What’s the best way to strip the paint off these without damaging the paint of the door and jamb?

Remove door, remove hinges from door, soak in paint stripper and wipe clean. Reinstall hinges to door and them install door.

May seem like a lot but once you do it this way, it will be easier than the hassle of dealing with it in place.

Or remove through away and by new ones of a similar size

Yeah was about to say, just take it all off. It’s not that hard. Just had to do this the other day (not for cleaning though).

Take a razor and cut around the edge of the hinge plate so it doesn’t pull the paint off the frame, but then just sand and clean the hinges as needed.

I second the razor blade idea. That will allow to take them off withour big paint chips.

Heat gun maybe.

Crisco, or shaving cream, maybe OSPHO (but soaking is recommended, so maybe it is a nonstarter).

Your main issue appears to be the hinge pin being painted. Just tap that pin out (with something skinny like a nail) remove the paint on the pin and reinstall. Might save you from having to strip the entire hinge or reinstall new ones

remove pins. remove door. remove hinges. remove paint from hinges. sand edges of door. repaint.
