Is transferring all my sats in one transaction to a different wallet counts as consolidating my UTXO?

Fees are low and I feel like it’s about time I’d take care of that

Yes that is consolidating. Although another wallet is not necessary. Just a new address. It doesn't matter what wallet it's in.

Wait…so if say I use Ledger device, I could simply generate new key and send it to myself to the same wallet?

Not a new key. A new address. Yes in the same wallet. Just click on what ever button is for receiving. If there is another button for 'new address' click that (most good wallets give you a new address each time anyway). Copy that address to the clipboard. Then go to send, select all the BTC you want to consolidate and paste in the 'receive address' you just copied. (check the first and last few characters to make sure you have it all)Pick your fee and hit send. This is also called a self-send. Most consolidate UTXOs within the same wallet unless there is something wrong with the wallet.
