Would one need to have another phone? Perhaps on the alternate platform?

It can be done on the same phone using amethyst (not sure about other clients).
Don't see why. if the phone matters the cold wallet isn't working.
And if you're going to have 2 hw wallets (I assume to create seeds on them) then may as well use different suppliers, to reduce supply chain risk etc.
Not sure of any other reason to have 2 hw wallets. Also for cold storage I'd recommend wiping them anyway and relying on the seeds
BitKey wallets are multi signature by default and assume you only have a single wallet per person. Great wallet, I just need to segregate funds. The phone holds 1 key, the device one and block holds one key.
