Why isn’t it easier to upload and publish video content via nostr clients yet? This is a glaring issue for anyone who wants to share content.

Yes, not as easy as it could be on mobile.

I've seen people using IPFS and it seems to work well. I don't know much about it. https://ipfs.tech/

I don’t use Amethyst. What is video publishing/uploading like with that one?

Twitter-like I believe (quit there, so no actual info), but Amethyst seems good at it 👍🏻
