Keto on a budget. We get roasts from Costco and slice into strips of steak. Today I am trying marinading for 30 minutes in blended pineapple (from thawed organic pineapple chunks). I had to get rid of them because they really mess with my carb addict brain. I’ll stick with berries occasionally.

Will rinse, pat dry, season, and cook quick on hot cast iron in a little Wagyu beef tallow.

The meat in the pan in the pic was from the last time I cooked without marinade. The flavor was great, but it was a little tough.

Looks great and carb addiction is real!

Meat was very tender, but released a lot of juices when cooking, so it was watery and hard to get a good seer. Texture ended up being more roast-like. I think I’ll try 15-20 minutes marinading rather than 30 next time.

One of my family's favorite meals is salsa meat (I've made it with beef, pork, chicken, and elk and with chunks, shreds, or ground). Brown meat (I usually use 2 lbs) in a skillet with a little Paleo Pink seasoning. Steam some riced cauliflower (usually 8-10 oz). Put riced cauliflower in bottom of baking pan. Spread meat over cauliflower. Pour a jar of salsa (8 oz?) over the meat. Sprinkle a cup or two of shredded cheddar over that and bake for 20-30 minutes at 350 F. I've gotten lots of complements and it is so easy.
