I recently bought a sous-vide machine. It was less than $100 fiat tokens (aka cuck bucks) but it was great buy. It cooks steak to exactly the temperature I want before I dash it on the hot grill for a finish. I’ve used it almost every day since I bought it.

We use it for over 8 hours on grass fed chuck roast (2 lbs. or so) then sear. Almost a good roast beef. Still working on it. Maybe needs more time.

Invest in a torch. A ts8000 will get a better char with less temp rise internally than any grill. I've talked to people who use the giant 500k BTU weed burner torches and like it but I've never tried it.

I after looking into this a little more, this is brilliant. Added bonus that it’s way more efficient on time and fuel as well
