Turns out I'm in complete opposition of how Oregon's Castle Doctrine laws work. With the way the laws are written, you're only allowed to use force proportional to the crime. So in my case, with somebody trespassing and stealing from me, it's technically classified as a non-violent theft. Meaning if I were to kneecap them, or rough them up with a machete, or even beat them with some fucking sticks, I could catch an assault charge and go to jail.
They're trespassing and stealing period. I should just be able to shoot them and have it be done with.
