Is anyone around these parts (I’m in New Zealand, but Australia would qualify) using Invidious? I’m interested of seeing videos without giving data to Google, but notice that all the servers are Northern Hemisphere and wonder if that matters.

I don't think so. AFAIK when you visit the server homepage, it downloads the Invidious JavaScript, and runs it in your web browser. Those scripts then access the YT servers the same way their own web apps do.
