Nice, ok. Eye of round is great as a standalone roast. I'd oil, season & sear the outside. Transfer to a baking pan with whatever veggies & let it roast uncovered for + or - an hour at 350. Check temp a little early so your center can stay med-rare to rare.

The chuck... you can make so much good stuff out of that. Mississippi pot roast. Birria. I could go on. You can cook that wet or dry, in the Dutch oven until it falls apart. If you want simple salt & pepper, make it dry, sear, covered, 30 min per pound at 300. Check it. It'll completely give up & fall to pieces when it's done.
