Thinking of saving up and getting an android phone so as to have more control over what I can use and do, especially when it comes to nostr and bitcoin. What’s a good phone to consider these days? I still have an old galaxy from around 2016 or so, but am unsure if it’s even any good to use these days. I was letting my kids use it for Pokémon go last year so maybe it’s still okay for nostr and lighting wallets?

If it still works, sure, but you'll want to at least get the latest custom ROM onto it since it will have newer than OEM security updates.
I would get a pixel and install GraphineOS on it. Its a privacy focussed OS perfect for a bitcoiner.
You can buy a refurbished or second hand one quite cheaply.
The setup is easy and you can do everything with it that you can do with any other android.
