Beautiful beets!

Thanks! Some are pretty large, I was growing them for their tops but I didn’t touch them much because I had so much chard.

I like ferments but don't love kimche so I started putting beets, and jalapeño slices in a Mason jar. let them sit until couple days until the bubbles start.

Do you make a brine and all that or just slices and in. Boil the beets or raw? I want to love fermented but I can’t find my jam.

I do a standard salt brine. Thats the cool thing about fermenting, the ingredients are totally up to you. Imo kimchi is meh. Do your own thing. Start simple and add stuff until you find a winner.

My first one was:

2 cans pickled beet (keep juice in)

Sliced jalapeños (leave more seed for +spice lvl)

Brine water

After 3 days I added some whole boiled eggs to the mix.

*Let them sit in the fridge after eggs are added.

Gives the eggs a nice spicy flavor and turns them bright purple.

Just to be clear, The boiled eggs do not ferment. They just sit in the ferment mix haha.
