The bad premiums on Bisq are only for orders no one takes, so they stay up and make it seem like that's all there is. Make your own offer for 1% over market and it will be taken.
FWIW you can export all Bisq trade data to analyze and I've found the average trade price is very close to the daily market rate.

I'm actually unable to download it for mac. Well, Im abel to, but there is an error in the download and I've tried a few times
