Pre-crack them. A slight fissure is all you need. Shells come off almost perfectly every time.

my dad had a needle in a cork and would prick a small hole in one end of the eggs he was going to boil.
I just bring them to boil in water in a sauce pot on the stove.
turn down the water simmer for for a total time of 10 minutes (from cold to cooked).
dump some water off, rinse with cold water until you can handle them .
put them back into the carton & write HARD in red sharpie.
