I have a question for you to ask your master.

The drain going to the wall. The bottom of that pipe is higher than the bottom of the two horizontal runs from the two sinks. Wouldn't that make those two horizontal pipes fill with water before being able to exit the drain to the wall? Is that ok per plumbing code?

Those under sink drain pipe connections never seem very strong to me for storing all that water all the time.

Good eye! You are correct! We did not rough in the plumbing. The outlet in the wall is about 21" above the floor, a height I use for bathroom lavs. Kitchen sinks I usually set about 15" above the floor. Because it is so high, the sink waste and trap are too low, so we had to install the trap backwards. The only other option is to cut the back of the cabinet and wall out, cut the tee out and lower it. That is much more work that most people do not want to do. There will be water sitting in that center waste outlet. As far as problems down the road, if there is a lot of food particles and grease and stuff that goes down, it will probably have issues, but in how long, it is hard to say.

I've seen where code requires a setup kinda like that for commercial kitchens to ensure sewage gases can't come up.

I bet that customer paid in fiat. Fix it right, fix it once.
