Any suggestions for must-visit wine stops in Portugal? I’m looking for something more specific than “go to Porto”

I would recommend visiting the port wine cellars in Gaia and if you are up to it visiting peso da régua galafura . There you can see many of the most famous quintas.
Flying to Lisbon or Porto?
I ended up getting sick and couldn’t make it beyond Lisbon. At least I did stop by Taylor’s in Lisbon.
