And yesterday, for the first time, I sent a raw food cake through the mail...express delivery, in a cooler bag with cooling elements...for a friend whose friend is turning 80 today. My friend lives abroad and really wanted to gift her friend a cake. So we decided to try this experiment. She's diabetic...So I sweetened the cake with a little fig and xylitol. A chocolate-blueberry raw food cake. All organic and made with love.

The cake doesn't look quite as nice in the tin, but when she takes the tin away, she will see the layers (chocloate and blueberry) and hopefully have joy and enjoyment in it.

People aren't yet used to eating raw vegan cakes. But so far, I've received only positive feedback, regardless of people's usual diet.
