My wife grew up in Quebec. She has fond memories of the boiling off phase. Surrounded by family and friends playing games with adult's taking turns watching the boil. After the pour they would take spoon full of thicker syrup from the bottom of the boil and mix it with snow. It would begin to harden, they would stretch it out, kind of maple taffy pull.
