Most ebikes don't have cellular modems, do they?
I mean if there is some kind of "sync" with an app on your phone, then maybe...

My ebike is Chinese, so yes.
It’s all tracked through the apps which are required to unlock the e-bikes. Also most ebike motors like bafang have GPS positioning
Well of course. The rentals certainly do so they can be located and repaired and what not. If you purchase your own then no? Unless you slap an air tag on it (which people also do).

Lectric e bikes do not track you, great bikes.
If you have an e-bike app for sure. But normal basic e-bikes are “dumb” there’s no worries about tracking
Mine has an odometer, so technically it tracks me. But it has no network access, so I doubt it's reporting on me.
We did some zap tests on this note… we made six attempts to⚡zap this note, at dave@dtrt.org, over a period of about 1 hour. In each case, we found that your lightning address server did not respond correctly. You might want to look into using a cloud-based Lightning node which is optimized for Nostr zaps, to get your zaps working.

e-bikes are just electric. Battery boost. Nothing about them says either way whether there is anything like that.
I have an e-bike that certainly does not do GPS or 4G or Internet, but it does show me how much battery is left.
Many brands want an app with an account to set it up. You can run the default settings but if you want to tweak them they require an app with an account and network connection.
