Lol - I've come close a couple of times.
The best tip I can give is to render with water in the pot & set a timer if you decide to do something else.
Never apply water to a fat fire though!

It seems obvious, but I saw someone do it in a commercial kitchen once.
Cook took the burning pot off the stove & placed it on the floor to burn out. A genius at the scrub sink pointed the hose at it.
It made quite the mess.
