This is indeed a good sight. Next level is milling it your self at home. Bit like fresh ground coffee it has more flavour and increased nutrients. π€π»
We've debated it in the past, not sure why we didn't in the end. I'm sure there's a reason π Something for the future
Apparently, itβs very common in Germany.
Getting the good grain can be a challenge, but certainly not impossible. I often use wholemeal to add some extra flavour and nutrients to the sourdough, whilst adding in some premium organic white flour for the protein.
