I made some organic ones and they still are mush. Probably pickeling them in brine with lactofermentation is the only way to keep them crisp, but then they taste like pickle beans.

Today, it's all mostly GMO ( genetically modified) stuff. Looks good, but tastes so so. Organics cost more but taste better, imho
