Pufa, poly unsaturated fatty acids do oxidate, because its unsaturated, especially when you heat it.

Our grandparents only used saturated fat for cooking.

May the italians used oliveoil for salad dressing, but not heat it.

Since 1971 we use industrial oil everywhere and the folk gets fat and unhealthy.

Ok. What do you use for cooking instead of seed oil? Butter? Other things ..?
