Well done! I love these sorts of experiments.

Traditionally, salt harvesters stopped the drying process well before full crystallisation.

The first stuff to crystallise out is gypsum.

Then the sodium and potassium chlorides (table salt).

Then you have a solution of "bittern" - magnesium sulfates and fluorides. They are very reluctant to crystalize, taste horrible, and not good for you in quantity.

I know that down in Anguilla in the West Indies, they flood large fields with seawater and let the sun evaporate it; but I don't know what, if any, post-processing is done...
