Multiple physical. Passphrases are a nice extra layer of security but don't seem essential, imo. Never all in one! God for bid, if you lose that seed. Good to keep your coin spread evenly across multiple devices. Don't be reliant on one device.

I am also hesitant to use passphrases as they introduce also new risks and make it more complex to restore.
Only thing i am not sure is if passphrases increase entropy of a seed? 🤔
Passphrases do involve new risks. Correct. But, just make sure to write them down along with your seed phrase and you'll be good to go.👍 They do not increase the entropy of a seed.

FYI, I have never made a passphrase for my Jades. I have for my Coldcard. Passphrases might work differently on a Jade. I'm not sure. What I mean by this is that the Coldcard doesn't change seed phrases unless you're importing a different wallet. Therefore you can have two different wallets on the same Coldcard. The seed will remain the same but the wallets will have different master fingerprints. I'm not sure if Jade follows the same structure. Be careful, man.

I have two coldcards. But I only use one, at the moment. If you want a good, easy-to-use, Bitcoin only hardware wallet, the Blockstream Jade is solid. I use two of these and am most likely going to buy a third pretty soon. I prefer open-source. Secure element seems to forcibly make you dependant on them. For instance, Ledger had a data breach a year or two ago and they are not open-source. Imagine how much customer info was leaked during that brief, but large, breach.
