Like anything it has tradeoffs. Longer shelf life, less likely to spoil. But it may also remove beneficial nutrients too.

I think manufacturers heat honey mostly to keep it flowing for longer. Raw pure honey will crystallize in a month or less.

Raw is natural, just strained. Pasteurized or processed honey can have additives, they heat it up to kill bacteria but it also reduces the antioxidants and nutrients in natural honey. Pasteurization also "improves" the appearance and shelf life. For stores... Raw honey is the way to go. Many processed or pasteurized honeys have extra things added that you don't want or Artificial flavoring.

I pay $9 for half pint of raw from my neighbor who keeps bees on the roof.
