I agree with this. Gnocchi is such a simple recepy but because of that is so complicated to make the perfect texture.. a lot of things influences, not only quantities, as the kind of flour, the water temperature, how you mix it and for how long.. also the potatoes.. I mean, a lot is there.

Simple food (most Italian food is dead simple) is hard to master. Nothing can save you from the fuck up. I HATED most of the gnocchis I have tried, but the ones I liked were so so good.
