Just bought a UPS for my nodes and server. The one I got can send a graceful shutdown signal to my devices in the event of a sustained power outage via a 3rd party software (for Linux). Is this worth using or is it a significant attack surface?

Might try https://networkupstools.org instead of running a vendor's software. It's surely packaged for your distribution. I have no experience with your UPS.
