The root problem with conventional currency is all the trust that's required to make it work. The central bank must be trusted not to debase the currency, but the history of fiat currencies is full of breaches of that trust.

In my opinion, a certain degree of trust is completely fine as long as it's voluntary and you have alternatives. Fiat is not voluntary, and that's the problem.

if it isn't voluntary why isn't everybody using bitcoin at this point?

Because the mass adoption of voluntary, better money still takes a very long time. Moreover, fiat currency is legally mandated and not voluntary.
