May be apple gives you some protection and security
They also do it to trap user, but it's hard to not use Apple, I mean I still have iPhone and use Mac as a daily driver. It's just very reliable experience. π€·ββοΈ

That's just laziness, apple products are terrible for your privacy and freedom.

Graphene and calyx are very easy to use and install. Then on PC just install linux
Yeah, that was exactly the reason for my main post, Android gives you an opportunity.
However, if you're not using these privacy focused OS, then it's the same, or I would say even worse for your privacy, because Google is literally an advertising company. But it also have some other utility and development based advantages.
Btw, you mentioned that you host your own servers. I respect that. I do it for my nodes.
Try out yunohost server distro, you will be amazed how easy it is. And it's very lightweight, you can run it on a rpi3
For your dev and testing servers, I can't recommend enough, plain Ubuntu Server with lxd. I have a dozen VMs hosting all my things like git remotes and databases all on a nuc and since it is just me and my family it doesn't break a sweat.
The big picture is that when you use stock android or iOS not only you loses freedom, but everybody around. If you save friends and family numbers, those personal details end in Google's and apple's servers at least. Your GPS and Bluetooth signals can denounce the position of others near you to their servers. Their backdoors can grab data from any app you use. Those are a few drawbacks I remember now, consider it.
Every centralized company is doing this. If they are saying otherwise, they are just lying. They are legally obligated to create these backdoors in your phones.
So why keep using their products?
Because they are technologically is very advanced. I mean, I use AWS, Azure, and GitHub for my work; they're all centralized. There just isn't better open source alternatives right now, but yes, we are trying to build an alternative. That's why we are here.
