Hmm, toss-up between Civilization franchise (not all were great tho), Super Mario Kart, or Factorio. Honorable mentions for Super Mario Bros., CounterStrike, and Chrono Trigger

Skyrim, Red Dead Redemption 2, FF IV, The Witcher 3, Assassin’s Creed: Black Flag, and Fallout IV are all great, but they’re RPGs, so once you’ve played thru them once I find they lose their luster.
