I've seen hard boiled eggs, the occasional cheese without enzymes and somewhat decent fruit in truck stops but agree with you it's generally awful.
It's a glimpse into what the average american eats every day. Every time I visit I can't believe how fat and destroyed the average person is over there.
I must add, food options in gas stations in Argentina are terrible too (except if there's a parrilla next to it)
