One of the worst things about cooking for a living is sometimes after work you have exhausted all of your cooking energy and you end up eating like trash due to pure laziness and lack of giving a fuck.

Two of my brothers in law work in food service and I’m really surprised that they still consistently have excitement and inspiration for cooking at home. Because I totally get what you’re saying.
Case in point, I really want a burger tonight. But today was so busy that I have zero fucks left to give and the thought of even prepping patties right now sounds disgusting. So I'm probably just going to go home and eat ramen and crack an egg in it. 😅

Can you make extra portion around the end when finishing the shift for yourself and then eat it?
I was speaking to an upmarket chef the other day, he mostly ate Chinese takeaways because he couldn’t be arsed after a day’s cooking.

I had a surprising amount of leftovers. First time doing beer batter with tallow. It was fucking amazing. Goal: host a nostrpleb dinner party and live stream it. I bet that would be a blast.
One of these days when I actually make it to a conference, it would be super fun to plan a dinner with a group of nostr peeps.
I love frying in tallow, although I don't think I've ever done a beer batter in it, surprisingly.
I use tallow daily and the hoarder in my didn't want to use it for deep frying but yesterday I went deep. The beer batter was so simple, ~2cup flower (just under) tsp baking soda, garlic powder salt pepper papprika. I dusted the fish, then refrigerated and when the oil was about 360-375, I started frying 2-4 pieces at a time. Also did the french fries from scratch but that was a pain in the ass and totall worth it! I made a homemade tartar sauce too, no seedoil may worcestershire sauce, sour cream, pickles, vinegar, mustard salt pepper garlic powder onion powder.. delightful

Lol. Cooking for friends is the best. It always seems to taste better when you got a good group of people with you.
It's my favorite thing to do is invite people over and cook for them. I'm a fascist in the kitchen, stay the fuck out of my way while I'm getting shit done. haha..but I love to serve meals for folks
It depends for me. I don't mind cooking with other people. But if I'm in get shit done mode, and you're dilly-dallying around, then I will probably kick you out of the kitchen until I'm done. 😅
A good sue chef, as I know you know, is the best. As a lawyer, similarly, a good paralegal is amazing, a bad one is a catastrophe. I treat my kitchen like my legal fiefdome. Anyone can play with me as long as they add value.
