Anyone that is formally trained will know that I'm doing this "wrong." I am intentionally breaking the rules, since I'm cooking to my own tastes and with the thought that this will simmer on low all night. The heavy lid will keep nearly all the liquid in so I'm not worried about it running dry by the time I get up in the morning.
