Fair enough. Respect that.

But what if one didn't need to worry about making money for shop rental and living, and was a restaurant owner for the passion for food and to enjoy hanging with patrons? Could that change your perception?

That's exactly my point, the passion includes the service of good drinks in combination with good food.

If you run the place for passion you only serve products you are passionate about and or you support the producer of those said products.

But I have in my mind's eye a picture of restaurants where you spend a longer time, not a fast food restaurant.

These are two completely different situations
