Ingredients
Cake
- 5 pasture-raised eggs (separate yolks + whites)
- 120g date paste
- 40g Lineage raw honey
- 90g Heart & Soil or Lineage ABC protein powder
- 60g Lineage collagen powder
- 140g grass-fed butter or ghee (melted + cooled)
- 2 pinches sea salt
- 1 tsp baking soda
Date Paste
- Organic pitted dried dates + water
Matcha Glaze Cream
- 250g grass-fed butter (softened)
- 40g raw milk
- 140g raw honey
- 1 tsp matcha (more for deeper green)
Instructions
1) Wet ingredients
- Melt butter/ghee and let cool.
- Mix date paste + honey until smooth. Set aside.
2) Dry ingredients
- In a large bowl, whisk protein powder + collagen + 1 pinch sea salt.
- Make a well in the center of the dry mix: add egg yolks + date-honey mixture.
- Mix while slowly streaming in cooled melted butter until smooth and fully combined.
3) Whip egg whites
- Add 1 pinch salt to whites and whisk to stiff, firm peaks.
4) Combine
- Gently fold whipped whites into batter until no white streaks remain.
- Fold in baking soda until fully incorporated.
5) Bake
- Line cake mold with unbleached parchment + lightly grease with butter.
- Pour batter in.
- Bake at 180°C (356°F) convection for 55 min, or until toothpick comes out clean.
- Cool completely before slicing.
Date Paste
1. Add dates to saucepan + cover with water.
2. Bring to a boil very medium heat, then reduce to low, cover, and simmer covered 15 min.
3. Strain the dates, reserving the cooking liquid.
4. Transfer dates to a blender and blend until smooth, adding small amounts of the reserved liquid as needed to reach a creamy consistency.
Matcha Glaze Cream
1. Soften butter at room temperature ~1 hr, cut into pieces.
2. Whip 3–4 min until pale + fluffy.
3. Slowly mix in raw milk + honey until smooth.
4. Add matcha little by little to taste/color.
Assembly
1. Slice cooled cake in half (or bake 2 cakes + trim top crusts).
2. Spread thick layer of matcha cream over bottom layer.
3. Top with second layer.
4. Frost top + sides, smooth with spatula.
5. Chill 1 hr minimum (overnight best).
6. Dust with matcha before serving.
For a taller cake
Bake two cakes, trim top crusts, stack + assemble the same way.
