I've take large chunks of finger skin off with them.

You definitely should be careful with them.

😬 Ouch!! It is definitely the most dangerous thing in my kitchen (other than myself 😂🤷‍♀️) and I always use the guard. I have a healthy respect for it and the box grater...there was an incident with my knuckles...
