Now that my hens only produce 1-2 eggs a day, I am into the waterglass eggs. This preservation method is not supported by the USDA. One of my batches was bad, so I tossed it in the compost. If just one egg is broken, assume the whole lot is bad. For this reason, I only preserve one gallon at a time. It's better to toss a gallon of eggs than 5 gallon bucket. Waterglass taste is a step below fresh and step above powder. They are good for baking and scrambling. You can't boil, steam or cook sunny side up successfully. This lot is from April 2025.

When we tried it we just wiped the eggs with mineral oil soaked rag and put back in egg carton and on shelf. Flip the carton monthly. They were still good 6 months later.
