How does this work? It generates a lightning invoice and you collect ecash? Automatic conversion?
Yes, the ecash is received by a server while you're offline that then sends it to you when you come back

I did the update for some reason snort social and iris says "Invalid Lightning Address"
coracle had no issues but I don't know if it actually works...
I just zapped you and it worked
Do the zaps actually show up in the client interface tho?

You often need to reconnect the relays under settings for incoming zaps to appear in wallet.
I received the zap from you and another one.
I sent to bear@minibits.cash from my node and it worked
but when I try to zap from snort and iris I get an error
Failed to get invoice from bear@minibits.cash
I noticed at first that relays need to update the ln address on their servers. I deleted all the extra relays and just selected damus and it then recognized my new on address as the minibits one. I then added back the other relays.
