Awesome! Give it about two weeks to ferment if you can wait. It's really hard to resist the temptation to taste it along the way of course, but you will definitely taste and smell the difference even after just a few days. Enjoy!

It will probably ferment some, so I gave it lots of headspace to bubble up.

This is a pound of unheated, unsprayed Virginia dandelion honey combined with ~2.5 oz mixed garlic and shallots (I cut garlic ends off after weighing and replaced a guess at that mass with 1/8 tsp organic cumin seeds), 0.05 oz mixed mint and thyme from my friendβs garden, and 2.45 oz mixed organic shishito and serrano peppers (as non-green as I could find).
Smells amazing π€€
