Imo, merchants need to demand Bitcoin in the following ways

1) outright refuse any form of fiat

2) if unwilling to do 1), charge premium for using fiat

3) if unwilling to do 2), give +10% of customer spends as store credit

Ex. Spend $100, receive $10 in Bitcoin, that can only be used in my store next time you visit
